I have used an Akai S2000 sampler for a long time. The akai stuff is real good. Only recently have I switched to Battery 3 and a laptop. I've had no issues with the laptop and it's really the best way to go. However, I've looked into the mpc 500 as a backup myself. It seems like a good machine. I have not had the chance to actually try one so I can't say for sure. I've always liked samplers over drum modules just for the reason you state. You can load your own sounds.
It sounds like this is the direction you want to go.

I had to switch back to wires as well after too much trouble with my MIDI jet pro. When it goes out, EVERYTHING stops. Kind of bad when you're in the middle of a song. Even with new batteries.

Just Zendrum for about four years now. I even custom build my own drums. I have a partial set that I haven't finished in about five years now.

Running an i book as well. I haven't had any issues for about two years now (so far so good). For whatever reason apple chose not to put firewire ports on the MAC air (a huge mistake).
I would stick with the mac book or mac book pro. Just treat it like any other electronic device and it will work good for you.

I usually just change kits on the laptop. I have enough time between songs to do that. I will put all my kits in one folder so they always show up in one browser window.

I use the MOTU 2408 and the Ultralite. The MOTU stuff is great and will give you no trouble.
